Wildcat Giveaway Extravaganza!

Tasty Tuesday Cherry-Coconut Cheese Coffee Cake!

After eating out so much while we were in Gatlinburg, I must admit, nothing sounds very tasty to me. Maybe after a few days of starvation, my appetite will return. In the meantime, I'll try to get a bit more exercise and seek inspiration from a recipe provided by our own Diva Donna!

Cherry-Coconut Cheese Coffee Cake


INGREDIENTS
2‑1/2
cups all-purpose flour
3/4
cup sugar
1/2
teaspoon baking powder
1/2
teaspoon baking soda
2
packages (3 ounces each) cream cheese, softened, divided
3/4
cup milk
2
tablespoons vegetable oil
2
eggs, divided
1
teaspoon vanilla
1/2
cup flaked coconut
3/4
cup cherry preserves
2
tablespoons margarine or butter
PREPARATION:
1. Preheat oven to 350°F. Grease and flour 9-inch springform pan. Combine flour and sugar in large bowl. Reserve 1/2 cup flour mixture; set aside. Stir baking powder and baking soda into remaining flour mixture. Cut in 1 package cream cheese with pastry blender or 2 knives until mixture resembles coarse crumbs; set aside.
2. Combine milk, oil and 1 egg in medium bowl. Add to cream cheese mixture; stir just until moistened. Spread batter on bottom and 1 inch up side of prepared pan. Combine remaining package cream cheese, remaining egg and vanilla in small bowl; stir until smooth. Pour over batter, spreading to within 1 inch of edge. Sprinkle coconut over cream cheese mixture. Spoon preserves evenly over coconut.
3. Cut margarine into reserved flour mixture with pastry blender or 2 knives until mixture resembles coarse crumbs. Sprinkle over preserves. Bake 55 to 60 minutes or until golden brown and toothpick inserted into crust comes out clean. Cool in pan on wire rack 15 minutes. Remove side of pan; serve warm.

Monday Moons and a Giveaway!

On our last day in Gatlinburg, we took a drive up to Newfound Gap. The road over the mountain to the Cherokee Reservation was washed out in some big rains they had earlier this year, so the Gap is as far as you can go. Very chilly and windy up there, and there was some snow along the way. Incredible view!


After a trip to the Smoky Mountain Knifeworks in Sevierville, we had lunch in Pigeon Forge and then took a drive to Cade's Cove.  The drive is very scenic, winding through the mountains with the river running alongside it.


It was sunny, but not appreciably warmer, and we passed a few hardy fishermen and these kayakers who looked like they were having a great time.  


We arrived at the Cade's Cove picnic grounds, took a quick break there, and then went on the 11 mile scenic loop through Cade's Cove.

I had no idea there were places like this in the Smokies, but apparently this was a settled area that was appropriated by the National Park.


There were several abandoned churches, including this Methodist church. 


Many homesteads also had to be abandoned when families were forced to leave their farms when the park was established.


It was getting dark by the time we left the park, and we stopped to get some photos of the moon rising over  the mountains.


Then it was off to Bubba Gump's for a margarita and Lt Dan's Drunken Shrimp!

 
Even though we hate to leave, it'll be good to get home to my guys and the horses!

Sunday's Hunk of the Day!

We had a leisurely breakfast in the room, then hit the main drag for some shopping.
We stopped to listen to the band playing in the Davy Crockett's moonshine distillery. They were very good, especially the banjo player. A good picker always make it seem so easy, and I know from my own experience that it isn't!

















Had a late lunch/early dinner at Blaine's Bar & Grill, which has never been open when we've been here before. Figured we'd better go while we had the chance. Nice place with good food and good service.

C-Sue is coming back in June, so we scoped out the place she'll be staying. While we were out, we found this dude sitting in his car at a trail head.

































I told him it was still too cold to drive naked. He needs to go to Florida. *;) winking

Then we went to Calhoun's Village. I bought some earrings and gave the proprietor a Wildcat card. She seemed interested and was pleased to know that there really was a man who actually looked like that. 

We got a drink at the Smoky Mountain Brewery. Good beer...

Then it was back to the hotel. Heading to Cade's Cove tomorrow!

Saturday's Hunk of the Day!

The first stop Friday morning was Alewine Pottery, which is some of the best craftsmanship in the Gatlinburg. I buy several Christmas presents (for myself and others) every time I'm here, and they always get fought over in the Dirty Santa gift exchange.

Friday Fun!

I should be having fun in the Smoky Mountains today. Although it is supposed to rain. Doesn't matter. There's always something to do. Maybe we'll go to the aquarium or something indoors. Or maybe take a drive through the artist's colony. Whatever we're doing, it's sure to be better than climbing the walls at home.

Here's an addition to today's post. We got to Gatlinburg at about 4PM, unloaded, unpacked, then went to Dick's Last Resort for dinner. I had a Rogue Dead Guy Ale, which wasn't too bad. 














We had fried pickles for an appetizer. And because I got so excited about the pickles,


















our waitress wrote this on my hat.
