It's that time of year again. The zucchini are about to start coming out of our ears. If we're lucky, that is. Donna sent me this recipe last August, but by that time, my plants were dead from squash vine borers. Hopefully this year will be better. I've been spraying the plants, but some have already succumbed. I spotted two tiny zucchinis when I sprayed them today. Fingers crossed that I can actually try this recipe!
ZUCCHINI Brownies(Makes 24)
Ingredients
- 1/2 cup vegetable oil
- 1 1/2 cups white sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups shredded zucchini
- 1/2 cup chopped walnuts

- 6 tablespoons unsweetened cocoa powder
- 1/4 cup margarine
- 2 cups confectioners' sugar
- 1/4 cup milk
- 1/2 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
- In
a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until
well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt;
stir into the sugar mixture. Fold in the zucchini and walnuts. Spread
evenly into the prepared pan.
- Bake
for 25 to 30 minutes in the preheated oven, until brownies spring back
when gently touched. To make the frosting, melt together the 6
tablespoons of cocoa and margarine; set aside to cool. In a medium bowl,
blend together the confectioners' sugar, milk and 1/2 teaspoon vanilla.
Stir in the cocoa mixture. Spread over cooled brownies before cutting
into squares.
- Bring your own bronc buster to the table to feast on the brownies!!

I have harvested my zucchini's about 5 times now - one of them grew to WWW size, proper angle and all, before I found it - and many more to come. I tried to grow them before and none grew, so this time I planted 6 seeds and I have 6 plants. I have shared with lots of family and friends. So thanks for this recipe! My DH will be really glad for a new idea.

Hope you like the brownies, Bernie! Before the squash borers took up residence in my garden, I used to grow zucchini like that. Now I'm lucky to get one or two. The plants come up and look great for a while, and then they die...
Dunno about riding a cowboy, Tatum, but I'm saving a horse today by skipping my riding lesson. It's too hot, and Harley and I don't tolerate the heat very well. Maybe next week will be better.
they sound delicious im trying them today after we fix the fence one of the horses were rolling and broke it scrape her leg all up then ran in her stall and some how ripped her eyelid almost off so vet just left stitched it up but she needed 2 shots just to drug her then poked her about 25 times with lido cane and she was still moving bad start to the day well one good thing the bill was only 190 thought it would be more lets hope it gets better or im making the brownies and eating them by my self lol
Amazing how quickly they can rip themselves up, isn't it? Hope her eye heals up okay. That could get nasty in a hurry.

If we ever get any rain, I might get some zucchini from my garden--if the borers don't kill the plants first... The brownies sound yummy, especially smeared all over the cowboy :)

Okay. I looked through my files, and yes, I do have some cowboys wearing nothing but chaps, but they aren't anywhere near as handsome as this fellow. Just sayin'...
