Tasty Tuesday Spinach Casserole!


I found this recipe in a local magazine, submitted by a lady from New Salisbury, IN who probably doesn't want her name mentioned on the CBEB, so I'll just leave it at that as my source. I modified it slightly by adding the pepper, but let me say this: I had a scrumptious dinner on Easter Sunday, and even with roast beef and Yorkshire pudding, which the guys and I absolutely love, this was the best thing on the table.

Spinach Casserole

















Ingredients:

3 eggs
3 Tbsp flour
1/2 tsp salt
1/2 tsp pepper
3 Tbsp melted butter
8 oz shredded cheddar cheese
1 (10 oz) box of frozen chopped spinach, thawed and drained (I squeeze it between two big tea strainers to get rid of the excess water)
1 (16 oz) container small curd cottage cheese

Mix all ingredients together and spoon into greased 8 inch square baking dish.
Bake at 350 degrees for 40 minutes.

I make something like that spinach recipe, but I add bran flakes to it for the fiber, and it's delicious!

The hunk is wonderful, just fuzzy enough and looking comfortable in his own skin...and not so young that I worry about the law...I really like this guy.

I bought some goat meat from a local butcher, and re-created a stew that I used to make when I had a herd of goats, and also often had venison available---and it was stellar!! I'd forgotten how good a simple stew of all the available foods you can gather in a day can be. We are, at bottom, really hunter-gatherers, and when you approach your evening's food with that in mind, you can create some awesome meals! I found some organic fingerling potatoes and some small white onions in a local store, and put together herbs from my backyard with some from my aunt's garden--and a couple limes from her tree. Then I grabbed a couple bay laurel leaves from my yard, and used a half a jalapeno and some carrots from my favorite Mexican restaurant nearby--add some smoked paprika and a bunch of garlic and olive oil---WOWSER!! I even surprised myself. For a side dish, I sliced thin some Persian cucumbers with one of those tiny white onions, more lime juice and a bit of garlic--and mixed them together with balsamic vinegar and some labne (like greek yoghurt, only thicker and richer) and salt & pepper---another winner! I am so lazy that I don't cook more than 5 nights a week, but this dinner has got me wanting to do so more often.

It was good left over too, Ana. Heated up very nicely in the microwave.

Sounds fabulous, Suzy! I love making stews and soups. There's nothing quite as satisfying to the psyche or the tummy. Must be nice to live where the bay laurel grows in your yard. Granted, I can grow a lot of herbs here, but nothing like that!

I knew you'd like him ER! I snagged another "mature" hunk off of FB the other day. Will post him soon!

Everything posted today titilates my taste buds. I peeked in late last night and thought niceeeeeeee!! but thought blondie needs to shave those legs. Today, I realize he's not a huntering and gathering caveman after all. He's straight out of a good western romance book or night time TV. But somebody needs to toss those ugly pillows back at Sue Ellen.

I'd post more of them, but those mature hunks are hard to find! Tons of young studs, but not many seasoned stallions. ;)
